Ingredients

60g (2 oz.) butter
1/2 cup (4 oz.) sugar
2 cups self raising flour
1 tsp ground ginger or vanilla
1/4 cup sultanas
1 egg

Method

Preheat oven to 180oC

1. Rub butter into flour, sugar and ginger
2. Beat 1 egg and make to nearly 1 cup with milk
3. Stir into dry mixture
4. Divide onto a greased tray - about a large heaped dessert spoon works well
5. Bake until cooked / golden (approx 14-17 min)

Notes:
This is an old farmer's recipe which was altered according to whatever ingredients were available at the time. Sometimes I add a little bit extra butter and usually use mixed fruit and use as much as I think looks ok (always more than 1/4 cup). The amount of milk depends on how dry the flour is. The mixture shouldn't be too wet or the old timers will spread too much.
Time for baking depends on the size of the old timers. Start watching them after about 15 minutes. They seem to be a bit different every time I make them.


Tips & Suggestions?


Hint: If the bases are a bit more cooked than you would like, use a sheet of baking paper under them. This provides a small amount of insulation to the base while cooking and will give more consistent cooking throughout.
